Diwali Dhamaka - spicy and citrussy with a chilli kick
Diwali Dhamaka has been specially created by our friend and collaborator, Chef Kanthi Thamma, to celebrate the festival of Diwali.
We think this is rather special and we hope you do too!
Ingredients:

Zest and juice of 2 Limes

200ml Water
-
200gm Sugar
-
1 Jalapeno, thinly sliced

1 tsp Chat Masala Powder

45 ml Lime–Jalapeno simple syrup (prepared)

50ml Spice Circuit Gin

120 ml Sparkling Lemonade
-
Ice
-
Garnish: Lime slice
Method

Make syrup by simmering lime juice, zest, water, sugar, and Jalapeno slices until sugar dissolves

Remove from heat, add chat masala, cool, and strain

Fill a tall glass with ice

Add prepared syrup, gin and top it up with sparkling lemonade

Stir well so the syrup doesn’t stick to the bottom
-
Garnish with a lime slice and fresh curry leaf and serve.
