Spring has sprung (kind of) and it's Easter this weekend, too, so how about a beautiful, easy-to-make, refreshing cocktail to stun your guests (or just enjoy yourself!).
Now, raspberries are really a summer fruit in this country (and apparently the best come from Scotland!) BUT use them from frozen and they will be a super cheap and sustainable way of adding fruit not only to your cocktails but of course also to your diet.

Make your own sugar syrup
Add sugar and hot/boiled water to a jar/bottle - 2:1 ratio (sugar:water). Stir to mix until the sugar has dissolved, let cool down/put in the fridge. Any sugar will do here (although we haven't tried icing sugar yet).
