The French 75 is a classic cocktail dating back to just after WWI. It originally uses lemon juice and powdered sugar which we have exchanged for lime juice and sugar syrup. There are tons of amazing food & drink producers based in Sussex so this cocktail adaptation is a homage to all those.
Also, did you know that limes are a by-product in the making of our gin because we use the fresh peel (hand-peeled of course!) in our distillation? This is an excellent way of using them up.
How to Make
Add the first 3 ingredients to a Boston shaker (or a clean former mustard/honey/jam jar will do just fine!) and shake with ice. Strain into a chilled flute or Collins glass, top up slowly with Ridgeview (Cavendish or Bloomsbury ideally) and stir lightly. Consider pouring half the sparkling wine first to reduce foaming.
PS. For a nice winter edition shake a sprig of rosemary with the other ingredients and garnish the finished drink with a fresh sprig.
Make your own sugar syrup
Add sugar and hot/boiled water to a jar/bottle - 2:1 ratio (sugar:water). Stir to mix until the sugar has dissolved, let cool down/put in the fridge. Any sugar will do here (although we haven't tried icing sugar yet).
